GFCF Chocolately Cereal Bars

Ingredients:

1 cup semi-sweet chocolate chips (I use Guittard - and I can go as high as 2 cups)
1/2 cup honey
1/2 cup cashew butter (I like Maranathons)
1 cup raw cashew pieces
3 cups Gluten free Cheerios (I like Nature's Path Organic Whole O's, too)


Directions:

  1. In a double boiler, melt the chocolate chips and honey together
  2. Remove from heat and add cashew butter, then cashews, then cereal O's
  3. Press into a square pan lined with parchment paper - for best results us 8" x 10" x 2" pan
  4. Chill for 2 hours or so until solid, then turn out of the pan and cut into squares. If it's crumbly, it's not done chilling, so put it back in the fridge a little longer.
