GFCF Pizza


Ingredients:

1 packet of yeast
1 tbs. Salt
1 1/2 cup Warm Water
1 tbs. Olive Oil
4 cups of rice flour


Directions:

First make Pizza dough - takes about 10 to 15 minutes

1 - take one yeast packet and one tablespoon of salt and add to 1.5 cups of warm water
2 - mix in water thoroughly and let sit for 10 minutes.
3 - add 1 tablespoon of olive oil
4 - add 4 cups of rice flour

Mix well - I never use a hand wisk since it just get stuff in the wisk. A spoon or flat knife work best

Dough is ready immediately though overnight will let it rise a bit with air.
A rolling pin works better than hands for making sure there are no air bubbles

Makes 2 pizzas, 14 inches - I split the finished dough and freeze half

TIP: when you go to use the dough (esp after overnight) it is sticky - lightly flour hands and cooking tray and it will stretch
and flatten easily.

For a pizza simply add sauce and toppings - there are a few varieties of dairy free cheeses.

Important: Regular pizza dough cooks in preheated over at 350 for 12 to 15 minutes. Homemade rice flour dough needs to cook longer, perhaps 3 to 5 minutes longer. Watch closely. For crispy crust use flat try well floured to cook on for first 8 minutes and then slide pizza directly onto rack for finish


Note: If you are taking GFCF to the next level you may want to avoid the yeast in this recipe.
